Cheese stuff Bell peppers

Today I decided to cook some stuff peppers on my Joe. My wife and daughter have been asking me to make some of these for about a week now. They are pretty easy to make and are very tasty!

Ingredients


  • 1 lbs. of Extra Lean Ground Beef
  • 6 Large Bell Peppers
  • 2 Clove of Garlic
  • 1 Can of diced tomatoes
  • ½ TBSP Kosher Salt
  • 2 TBSP HP Sauce
  • 1-Cup cheddar cheese, shredded
  • 2 TBSP Parmesan cheese


Directions:

Chopped one sweet onion in small pieces


Mince to clove of fresh garlic


Pre-heat your Kamado Joe for direct cooking at 350 degrees


Cook your ground beef, onion, garlic, black pepper, kosher salt in a cast iron frying pan. Stir frequently.



Meanwhile cook ½ cup of rice

Ounce ground beef is cooked drain fat from pan.

Now add 1 can of Drained Diced tomatoes, HP Sauce and the cooked rice to the ground beef and cook for a few more minutes
Add diced tomatoes
 Add HP sauce
Add cooked Rice

Cut off the tops of Bell peppers; discard seeds and membranes.




Now remove the stuffing from the BBQ and mix in the cheese to taste


Coat the bottom of the peppers whit Parmesan cheese

Filled the peppers with the stuffing


Grill on the BBQ at 350 for 30 minutes and in the last 5 minutes add any remaining cheese to the top of the peppers.

 Top with cheese
 Ready
