Dry rub Pork Tenderloins

Today we will cook a dry rub pork tenderloins on the classic Joe. These are quite tasty and easy to grill for any beginner. We will be making our own rub today as well. You can use a charcoal grill or propane grill to cook these but a charcoal grill is always preferred! Let’s get cooking!

Pork Rub Recipe

Ingredients:
  • 1 tbsp dry mustard
  • 1 tbsp chili powder
  • 1 tbsp freshly ground black pepper
  • 2 tbsp freshly ground red pepper
  • 1 tbsp ground cumin
  • 1 tbsp ground chipotle Chile pepper
  • 2 tbsp dried minced onion
  • 1 cup brown sugar
  • 1 cup paprika
  • ½ cup granulated garlic
  • ½ cup kosher salt

Direction:

Mix all the ingredients very well. Store in air tight container.

OK it’s now time to prep and cook the pork tenderloin. You will need our rub and one onion peeled and sliced.

In a large zip lock back add the pork tenderloin and a generous amount of rub. Shake the bag till the tenderloin are evenly coated;




Now put the tenderloin in fridge for 1 hour so the rubs get well absorbed by the meat;

Meanwhile pre-heat your grill to 225 to 250 degrees Fahrenheit I will be using Grillgrates to give me a semi indirect surface (If you don’t have Grillgrates you want to cook them indirect);


It’s now time to add a chunk of apple wood to the hot coals for a little smoke flavor and place your tenderloins on the Grillgrates and place the slices of onion on top of them;

Smoke them for 30 minutes, then increase the temp to 375 Fahrenheit for another 20-30 minutes or until internal temp reaches 160 to 180 degrees Fahrenheit. If you want the center to be pink stop at around 160 degrees Fahrenheit. I also flip them in the middle of the cook.

Brisket Dry Rub's

After receiving a few email on what’s a good Brisket Dry Rub. I decided to post my favorite one which is quite easy to make.

Ingredients

  • 2 tsp freshly ground red pepper
  • 2 tbsp onion powder
  • 2 tbsp chili powder
  • 2 tbsp ground chipoltle chili
  • 1 ½ tbsp garlic powder
  • 2 tbsp ancho chile powder
  • ½ cup paprika
  • ¼ cup smoke paprika
  • ¼ cup kosher salt
  • ¼ cup grounded raw sugar
  • ¼ cup freshly ground black pepper


Direction:

Stir all ingredients together in a medium bowl or in a blender. Store in a air tight container and this rub will keep for up to six months.


Rub your brisket thoroughly, barbecue & smoke and enjoy!

Another good recipe that I got Brisket Rub recipe that I got from a friend at a tailgate party.

Ingrediants:

  • 2 Tbsp freshly ground black pepper
  • 1 Tbsp kosher salt or sea salt
  • 1 Tbsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried parsley
  • 1 tsp oregano
  • 1 tsp sugar

Direction:

Stir all ingredients together in a medium bowl or in a blender. Store in a air tight container and this rub will keep for up to six months.

Rub your brisket thoroughly, barbecue & smoke and enjoy!

Tip: I use a coffee grinder to freshly grind my spices!

White Barbecue Sauce

Well I was down south in Mobile, Alabama a few years back with the Canadian Navy. I came across this sauce at a tailgate party during Mardi Gras. All I can say is this sauce was amazing and I had to find the recipe for it.  I managed to get a recipe from a local friend down there but it doesn't beat Big Bob Gibson recipe. Well I finally found Big Bob Gibson's white sauce recipe on the web site amazingribs! This recipe makes 1.5 cups of white BBQ sauce. This sauce is primarily used on chicken. I use it as a dipping sauce for my chicken. This sauce keeps for two weeks in the fridge.

I also included the other recipe that I got from my friend since everyone has different taste buds!

Big Bob Gibson Recipe

Ingredients:

  • 3/4 cup mayonnaise
  • 1/3 cup apple cider vinegar
  • 1/4 cup lemon juice
  • 1/4 cup apple juice
  • 1 tablespoon powdered garlic
  • 1 tablespoon prepared horseradish from a jar (either in vinegar or creamy)
  • 1 tablespoons coarsely ground black pepper
  • 1 teaspoon mustard powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon finely ground cayenne pepper


Directions:

Whisk together all the ingredients in a large bowl and let it refrigerate for at least 2 hours.

Note: You can substitute the mayo with Greek yogurt which will give you a thicker sauce.

White Barbecue Sauce

Ingredients

  • 1 cup mayonnaise
  • 1/2 cup white vinegar
  • 2 tablespoons sugar
  • 1 tablespoon freshly squeezed lemon juice (1 lemon)
  • 1 teaspoon prepared horseradish
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Directions:


Whisk together all the ingredients in a large bowl and let it refrigerate for at least 2 hours.

Note: you can add 1/4 cup corn syrup to make it sweeter.

Sweet Hot BBQ sauce

Here’s an easy to make Sweet Hot BBQ sauce that goes very well on Chicken and Pork.


Ingredients:
  • ¼ tsp onion powder
  • ½ tsp cayenne pepper
  • ½ tsp chili powder
  • ½ tsp freshly ground black pepper
  • 2 tsp smoked paprika
  • 1 tsp garlic salt
  • 1 ¼ cup water
  • 6 ounce tomato paste
  • ½ cup molasses
  • ¼ cup vinegar
  • ¼ cup liquid honey
  • ½ cup dark corn syrup
  • 1 tsp liquid smoke
  • 1 tbsp Jack Daniels or Bourbon
  • 1 tbsp Worcestershire sauce
  • 1 tsp Franks hot sauce or Tabasco sauce


Direction:

In a sauce pan stir together all the ingredients and slowly bring to a boil while steering. Now reduce heat and simmer and stir every few minutes for approximately 45-60 minutes or until desired constancy.

This recipe makes approximately 2 cups and keeps for two week in air tight jar in fridge.
